Story Time!
Growing up, our Bubba used to make these hand pies called Pierzshkies (pronounced: Peeair-shk-eez)! You can probably judge from the name that these fruit-filled hand pies are NOT from an English-speaking country. Bubba was Polish and her family was sometimes Russian and sometimes Polish - depending on which kingdom was running the show at the time.
As kids, we'd often bake with Bubba when we had a day off of school or our parents needed a break from us. ๐ Traditionally stuffed with blueberries and cinnamon, pierzshkies are closed and sealed with something Bubba called a "double-stitch". To this day, only one of us can execute this as perfectly as she did (and it's not Hillary).
There was no rhyme or reason as to when Bubba baked these - sometimes it was because there was a sale at the grocery store on blueberries. Other times it was because there was a sale on flour! You see where this is going...but when she baked, she shared with anyone who asked. We like to bake these for holidays, Shabbat, and any time we have extra challah dough leftover. That's right - these babies are made from the same dough we use to make our challah because Bubba taught us that nothing goes to waste.
