Back to the market again for us! This Saturday 8am-sold out! See our stories for this week’s menu.💗🥖🌾

As promised, we are going to start sharing our sourdough wisdom and today will be Lesson 1: What is Prairie Flour Sourdough?

1).Prairie Flour sourdough is a traditional bread handmade the fashion that as been made for thousands of years. Baked to show authentic characteristics of a quality bread: an “ear”, crusty ombré crust, and crumb with a balance of chew/fermentation bubbles and taste! *Don’t fret, we’ll go into detail about these characteristics later in this course.☺️💗🌾🥖

2). Sourdough is made with only flour, water, starter,(our own starter of just flour/water). and salt. Yep, that’s it-facts.🧐

3). Our starter is made up only of flour and water. It is over 2 years old and is feed daily. Humidity, ambient temperatures, air quality, water quality, type of vessel used to store starter, and flour used all effect the productivity of our starter. Simply skipping one feeding leads to a disaster for our baker. We’ve learned the hard way a time or two! 🤦🏻‍♀️

3). Our breads come in the traditional boule (pronounced “bowl”), batard (chunky oval shape), and baguettes styles. NEVER, ever baked in a pan, shaped by proper preparation and shaping. Practice makes something close to perfect, but each bread is still very unique and often it’s shape reflects that. Which our baker absolutely loves!🌾💗🥖👩🏻‍🍳
