Fermentolyse vs autolyse. Different strokes for different folks. I prefer fermentolyse because I’ve noticed my bread has more “bounce” and rise if I wait to add the salt. I don’t like autolyse because trying to mix in the starter and salt after is difficult. Both have their own benefits and drawbacks, experiment!

Discard is always a confusing step for some people, and I understand why. The idea of making a starter just to throw some away can seem counterintuitive, but it’s all part of the process. And you don’t need to actually throw it away. There has been many times where I needed more starter and could pull from my discard reserves to make more. You can also make tons of cool stuff with discard!

Hydration is very important in bread making. It determines how the bread will rise in the oven, how dense the crumb will be, the crust, so much goes into it. For a standard country loaf I prefer around 73% hydration. That yields me a crumb that is not too open but also not too dense.

When calculating hydration you also need to factor in your liquid starter. There is water in that too. Typically fats like olive oil don’t count in hydration.
