Happy Sunday morning, there is a process that makes true sourdough bread special. From start to finish it takes 2 days to make and thats due to the fermentation process. The health benefits of this process uses lactic acid bacteria and yeast to break down gluten and phytic acid, resulting in better digestibility, improved mineral absorption, and a lower glycemic index.
