I love rhubarb cake in Spring. It just belongs into this season for me. I used to not like rhubarb at all as a kid. My mother would make rhubarb cake with a merengue topping. The rhubarb was so sour and overpowered everything else. Then my coworker intoduced me to this devine combination of flavors and textures. The perfume like flavor of the rhubarb comes out so wonderful between the vanilla custard and the streusels. It's a must try.
