Reflecting back on the past few months, there are a few things I think need to be said. First, I’m so incredibly grateful for our loyal guests! We can’t be here without you! I have noticed a pattern that I should add clarity to & hopefully help our guests in the future. We have many guests come in asking about breads, buns, caramel rolls, specific donuts, etc… we are a small, family owned bakery operating in a small space. We have a menu posted on the wall behind the front counter to let people know what options there are. It does not mean that we have all of those items every day. There are honestly not enough hours in the day for us to be able to do everything on the menu on a daily basis. We gladly welcome & encourage special orders for breads, buns, rolls, bars, cookies, etc. There is no upcharge or fee for special orders, nor is there a minimum order. Special orders allow us to know what our guests are looking for & when they want it. I can’t tell you how many times people have come in looking for bread & been disappointed when it’s not there. We then pump out a bunch of bread, only to watch it sit on the shelf & ultimately get thrown or frozen to turn into croutons or something else.
We still ask for at least a one week notice on cakes & cupcakes. Cakes & cupcakes require longer notice so we can plan for time & space to be able to accomplish the orders. They also take a considerable amount of time, depending on what was ordered. I realize that some people think we charge too much for the cakes/cupcakes. I’ll be completely honest with you, I undercharge for the amount of time, patience, frustration & detail that goes into a lot of these cakes. What one might think is just a simple cake, does not necessarily understand what goes into creating that simple cake. Mind you, some are pretty straightforward, while others get much more detailed & complicated. We are attempting to create the vision you asked us for & many don’t realize that there are hours of work that go into them. It is also somewhat baffling to me that guests don’t tip on cakes. I’m not complaining, I just don’t understand it. We work to make something that is in many cases the centerpiece for your party & don’t feel it necessary to leave a tip, because in your mind, we charged you plenty. I’ll assure you, we charged you far less than we should have. Our costs of raw goods have risen & our prices have not, we are walking a fine line between charging what we should be charging & keeping the lights on. If for any reason, you are dissatisfied with a cake you received from us, I need to know, so I can make it right for you, or at the very least, try to make it right.
I would ask that if you are upset about something, you talk to me. Please don’t yell at or get mad at my counter staff. Ultimately, I am responsible for our offering every day, pricing, etc. We are simply doing the best we can with the time & space we have & we can’t control what our food costs are. We try to always offer the highest quality ingredients in our lunches, baked goods, etc. and our prices reflect that.
I guess, to reiterate…if you want something, place a special order for it. We will happily make it for you if we can. In the infamous words of Jerry Maguire “Help me, help you.”
