Specialties are; Brazo de Mercedez, a soft meringue roll filled with generous sweet custard and Sansrival, layers of cashew-merigue disk filled and covered with special buttercream, generously topped with chopped toasted cashew.

A compresive well-written post about the science of sugar in baking and a but about good health by Jamie Guardino Cake Design

As someone who studied the science and engineering of food, it always break my ❤️ when people blame food for their health issues. It’s the mentality of having to blame “something” other than ourselves.

As most (if not all) Nutritionist and Dietiticians has always been saying it always boils down to a healthy lifestyle; 1. “well-balanced diet” 2. be physically-active, and 3. get enough rest.

The notion that one can be “healthy” without all 3 elements is false and is a fad.

“Why reducing the sugar in the recipe is not as simple as it sounds”

Message: ‘Hi chef, can you reduce the sugar in the cake? My parents are diabetics/I’m trying to lose weight/I don’t want to get fat.’

I hear this sometimes from new customers who have never tried my cakes. Those who have know my cakes aren’t that sweet. First of all, sugar doesn’t make you fat, overconsumption of calories make you gain fat. Cakes, desserts and sugar (carbs) often get blamed for causing obesity but it’s people’s lack of nutrition knowledge, self-discipline and self-control that cause it. Check my previous post about this.

Two, sugar is not the main cause of diabetes. Overconsumption of sugars, fats and high-calorie foods causing obesity is one of the risk factors for diabetes t2. Third, if you’re trying to lose weight, you should be eating in a caloric deficit. You can literally eat cake everyday and still lose weight if you are in a deficit, but that’s not exactly nutritious from a health standpoint.

So, can we reduce or replace the sugar in a recipe with artificial sweeteners? It’s not that simple. Sugar has many functions in baking other than to make things sweet and taste good. That’s what I want to talk about today.

Main functions of sugar:
1. Sweetener

2. Tenderizer - sugars interfere with gluten formation, coagulation of proteins and gelatinization of starches and in doing so, they result in more tender baked goods. The more sugar added, the more tender the cake.

3. Encourages browning and contributes to a baked flavor - sugar adds flavor and color to baked goods through the process of caramelization and Maillard reaction. One of the people who taught me, a French chef, when I thought I overbaked my pate a choux told me “Jamie, there is flavor in color. This is perfect.” Caramelization gives a cooked sugar flavor while Maillard reaction gives baked goods a diverse range of flavors from roasted coffee, roasted cocoa, toasted nuts, molasses to maple syrup tastes.

4. Sugar retains moistness and extends shelf-life - sugar is hygroscopic, meaning it holds on to moisture which in turn keeps baked goods from drying and staling. Because of this property, baked goods do not stale as quickly as say, breads that are made with little or no sugar.

5. Helps baked goods rise - sugar through creaming assists in leavening of baked goods by helping incorporate air. Because sugar is hygroscopic, it provides structure for gas expansion in the oven, promoting rise in baked goods.

6. Stabilizer - sugar stabilizes egg whites in meringue, angel food cakes, mousses, and eggs in foam-type cakes like chiffon and genoise.

7. Food for yeast - yeasts need food to ferment, sugar provides food for the yeast to produce carbon dioxide for leavening many bread doughs.

8. Promotes spread in cookies - the more sugar, the more spread and the chewier the cookie.

9. Prevents microbial growth - at high levels, sugars act as preservatives to prevent the growth of microorganisms.

10. Provides a source of acid for leavening - sugar syrups like honey contain a little acid, when combined with baking soda, leavens baked goods.

11. Makes ice creams and other frozen desserts soft and less icy

These functions of sugar make it hard to replace in baked goods. We can reduce up to 1/3 of the sugar in a recipe, anything more and you’ll end up with a dry and dense cake with little flavor. If it is absolutely forbidden for you to eat anything sugary, maybe you should skip the cake. Artificial sweeteners are just that, sweeteners. Substituting sugar for artificial sweeteners would mean reformulating the recipe to make up for the loss in moisture, flavor, texture, etc. If the baker doesn’t offer sugar-free cakes and someone requests for them, that would require several trial-and-errors and cost us money. Sugar-free desserts will also have to cost more because the ingredients needed to substitute are more expensive. Also, if you are consuming products using artificial sweeteners, you might want to minimize your portion size ans eat in moderation. Our bodies are not made for artificial sweeteners and if eaten in excess, some people might not properly digest them and cause laxative effects, diarrhea, gas and bloating. Yikes! Don’t believe me? Google it.

These fad diets like keto, low-fat, low-carb are just ways to create a caloric deficit for people who want to lose weight. You do not necessarily have to eat keto or low carb desserts in order to do that. Eating them will not automatically make you lose 100lbs and look like a supermodel. Many people selling these desserts often do not know a lot about nutrition and fitness too.
