Round two. The Salami Crostata is back Saturday morning at Walnut Creek.

Made with Fra’ Mani, the Berkeley salumi company celebrating 20 years. A pastry shell filled with roasted broccoli rabe, roasted garlic, stracciatella and parmesan. Layered with Fra’ Mani Salame Rosa, Genoa Salame and Nostrano Salame, plus roasted apples and fresh mozzarella. Finished with a chicory, honeycrisp apple, arugula and chive salad dressed in Italian salsa verde and Giuseppe Giusti balsamic.

Made to order. $14. Ten available Saturday, August 15. Then ten more on Saturday, August 22. After that it’s done.

Three steps in a seven second video. Two days in real life.

Day one is the b**a, cold fermenting overnight. Day two is the dough, the shaping, the proof on cornmeal, and the griddle.

Every muffin is shaped by hand and every muffin is hand griddled. Going free form changed everything.
