The trees decided it was time. Woke up this morning expecting to see mostly full tanks but it wasn’t meant to be. They were all less than half and there was hardly any sap coming in. The freeze that they were calling for tomorrow night fizzled so with the warm forecast headed into the weekend and no freezes the end of the season is here. I knew it was close as I’ve seen the first wild leaks and spring beauty’s emerging this past weekend. Heard peepers for first time last night and the gobblers have become vocal. All signs that things are coming to an end. We didn’t collect the most sap we ever have but with the high sugar content we made more syrup than we ever have. Now it’s on to cleaning up and popping taps. Event season starts later in April so we’ll be seeing you all at one of our many events soon.

Finishing up the sap from Wednesday/Thursday’s run today. Froze up yesterday and was 17 this morning. Sunny today but still hasn’t gone above freezing. Hank and C**t took over cooking duties this morning after they got home from baseball practice and I headed out into the woods to check lines for issues before it starts running again tomorrow afternoon. Found issues on 22 lines which is significant. I just walked these lines like 2 weeks ago and had them looking good. Just shows how things happen regularly and the need for stay on top of it. The syrup gods must be watching over us as the weather forecast changed a bit and now we are going to get another cold snap Tuesday into Wednesday which should give us an opportunity for one more run before the season ends.

Back at it again after being froze up for 2 days. Didn’t start running well until yesterday afternoon but it ran through the night. I keep track of Growing Degree Days to indicate when the season may end and my math says that we should make it to beginning of next week but then they are forecasting a week or more of mid 50’s to lower 60’s and that will likely be the the end. If my prediction is correct we’ll cook into Tuesday/Wednesday and then it’ll be over. Not the most sap per tap I’ve gotten in a season but close and this year the sugar content has consistently been 1.8-2 so we have made more syrup than usual. Likely best year for finished syrup we’ve had in 15 years of making syrup. We’ll keep you posted. Storms are rolling through now and we expect it to freeze up over night again through Sunday morning and start the final run of the season into beginning of next week.

Been a decent week making some beautiful amber syrup. After the great run Sunday into Monday, it froze up for several days and didn’t really run again until Thursday late afternoon. Not as good of a run as Sunday/Monday but steady. Weather looks good for this week so I expect after a good freeze beginning of week we should have a decent run and then repeat going into next weekend.

What a difference 24 hours makes! Looks like we are in a pattern of these roller coaster temps, couple days of warming followed by couple days of cold. Good news is that this is exactly what we need for the trees to flow and then replenish and flow again. Woke up yesterday to one tank over flowing and 2 very close to overflowing. Sunday through yesterday we collected over 5000 gallons of sap. Pretty awesome for a 36 hour run. I’ll be cooking away today getting caught up. Next warm up starts Thursday through Saturday so we’ll be ready to repeat then.

This is what a properly functioning lateral line looks like. You can see the sap and air gradation in the line. I walk the mainlines and look at where the lateral comes into the mainline. If I don’t see the sap looking like the video I know there’s a problem and then I walk the line until I find it. You should check lines as often as you can because problems can arise at any moment.

We use 3/16 tubing which generates a natural vacuum with drop in the line. The more drop the higher the vacuum. Ideally you want 25-30 feet drop from last tap to the mainline. The vacuum is what causes the sap gradation in the lines like this.

Decided to walk lines today in the main woods and fix any issues. Started at 10 and finally made it out at 530. There were a few small trees that fell on line, one broken line, quite a few drop lines that popped off the taps and several taps we missed and I had to drill and put in. Took awhile to get it all fixed up but when I was done I can say that every line was functioning properly. I’ll post a video of what a properly functioning line looks like after I post this. It won’t let me add a video with photos. Sap flow picked up as afternoon went on and things thawed out. I gathered what sap had run around 7 and the sap was really coming in. It’s supposed to stay above freezing tonight so it should run all night and all day tomorrow until it freezes tomorrow night. Then it’s supposed to be cold for couple days and it’ll stay froze up. Then it should start slowly picking up Thursday into the weekend.

Finished up the sap we had gathered on Wednesday night before it froze by Thursday morning. In 8 days, we collected almost 13,000 gallons of sap. A lot for us in that period of time. Maybe the single best run I’ve ever seen. It’s stayed below freezing or right at 32 since so the sap hasn’t run. Woke up Friday morning to 17 degrees and woke up this morning to 2 inches of snow. Good news is with the freezes the trees are busy replenishing their reserves and should be ready for another decent sap run tomorrow into Monday. Below are a few pictures from cooking this week.
