Here’s exactly how I bake 12 loaves of sourdough bread in my double oven!
I’ve baked THOUSANDS of loaves this way as a cottage baker, and this is the method that works for me! 👇🏻
🍞 HOW I BAKE 6 LOAVES AT ONCE:
1. Put your roasting pans + lids in the oven, then turn it to 450°F. Let them preheat with the oven.
2. Once preheated, carefully remove the pans and load your scored loaves.
3. Cover + bake at 450°F for 25 minutes.
4. HALF WAY through, switch the TOP loaves with the BOTTOM loaves.
5. After 25 minutes, remove the lids.
6. Bake uncovered for another 15 minutes at 450°F, switching the top + bottom loaves halfway through.
7. Once beautifully golden brown, they’re ready!
❓ FAQ:
“How do you get an ear?”
I actually rarely get an ear! 😂 I just photograph it when I do. If you want a better ear, avoid over-fermenting your dough. But you won’t get one every time!
“How many grams are your loaves?”
950g pre-bake!
“How do you fit 6 pans in one oven?!”
I have a standard Electrolux oven. They technically don’t fit straight across, but because of the tapered design, I stagger them slightly and they fit!
“Do you preheat the pans?”
Yes! I put the pans in before turning the oven on, so they preheat with the oven.
“I have a gas oven with only a bottom heating element. Help!”
Try switching/rotating your loaves throughout the bake. You can also put a cookie sheet on the rack underneath to create a heat buffer. Some bakers use rice under the parchment as well.
If your bottoms are still burning, try 440°F for the first 25 minutes + 425°F uncovered.
“Why do you switch the loaves?”
Home ovens heat unevenly, so switching them helps everything bake more evenly.
“What if I only have room for 3?”
Use the same method. You may just need less switching depending on your oven!
