Inspiration doesn’t take a day off and apparently neither do I - Haha!
I had a Sunday afternoon off last week and had been thinking about this flavor combo for the last few weeks so I made it happen. My mom makes butterfinger ice cream every summer and it has a light chocolate milk base with butterfinger bits throughout - we love it!
I doctored my vanilla cake recipe to make a milk chocolate cake and made a milk chocolate buttercream with butterfinger bits to make this cake. And topped it with scoops to make it look like ice cream of course!
I will say it was a little too sweet for my cake taste but it was so much fun to make and did hit the flavor notes of my mom’s ice cream! This flavor will not be making it to my menu as frosting with bits in it is quite cantankerous to smooth out and I am very partial to the chocolate cake recipe I have on my menu already.
Consider this a closing goodbye to summer (finally!!) as the temps officially dropped below 50 degrees this morning! Amen and amen.
