Brioche dough in the works for my new pans which are coming tonite from and using the Sonora berries I was gifted by Amanda Bergman Bergman Family Farms. I love that it has a 14% protein and 14% ASH content. The higher the ash content the more minerals are present in the flour itself and therefore excellent for our bodies and our health. This is 100% pure milled berries, no extraction.
Looking forward to my results so stay tuned!
