Don't toss the tops! πŸ₯•

Did you know? You can enjoy the green tops of most roots and shoots. 4 Ways to make the most of your next CSA box or market haul:

Onion Tops- The tops of fresh onions can be enjoyed fresh or cooked just like scallions. They have a mild oniony flavor. Find a pesto recipe here: https://food52.com/recipes/28169-walnut-and-onion-top-pesto

Beet Greens- The top leaves on beets are totally edible. Remove the stalks and enjoy them like you would spinach or swiss chard. Find a recipe for Beet Green Dal here: https://www.spiceupthecurry.com/beet-greens-dal/

Radish Greens- The greens on top of radishes can be eaten! Because the leaves are durable and can be a bit prickly, they are best cooked or made into a pesto. A recipe for sweet and sour radishes and greens here: https://cooking.nytimes.com/recipes/1016665-sweet-and-sour-stir-fried-radishes-with-their-greens

Fennel Fronds- The ferny tops of fennel bulbs can be clipped off and used like an herb for garnish or to add a fennel flavor to any dish. Avoid the fibrous top stems, and just take the delicate parts. Find a recipe for fennel flavored risotto here: https://www.foodandwine.com/recipes/fennel-frond-orzo
