The patriarch of Hi-Do Bakery, Mr. Ha Do, escaped from Communist imprisonment in 1981 and immigrated to the United States in 1984. He settled in Monterey Bay, California where he learned his craft while working at a local bakery company.
In 1989, he moved to Southeast Louisiana and opened the first Hi-Do Bakery in Boutte. It took a few different tries and locations, but stability was finally realized when he opened the current location in Terrytown in 1995. In 1991, he was able to move his wife and two young daughters from Vietnam over to the United States.
This picture is the French bread that is one of the staples of our bakery. I asked Mr. Do how he came up with the recipe. He simply replied, "The customers in New Orleans told me they wanted French bread that was crispy on the outside, but light on the inside. It was different from what I learned in Monterey, so I tried a few things and came up with this, and they liked it."
The Hi-Do family wants to express their sincere gratitude to all of the customers who have supported them along the way.
(Today is Mr. Do's birthday 🎂🎉. In celebration, he's cranking out king cakes, pastries and French bread all day 😂).
