A brand new week is here, Y’all, and that means fresh-baked goodies from Appalachian Baking Co. are stocked up at Harrogate Plant and Produce! 🧁🌿🍑

This week our stuffed cookies are finally back on the shelves, and we’re bringing some mighty good flavors with us:

Hi Y’all! 🧈☕🥐

One thing we hear quite often at Appalachian Baking Co. is:
“What’s the difference between a biscuit and a scone?”

And honestly, that’s a fair question! They may look a little alike, but they each bring something special to the table.

A traditional Southern biscuit is soft, flaky, buttery, and savory. It’s made to be pulled apart, smothered in gravy, filled with sausage, or served alongside a big Sunday supper. Around Appalachia, biscuits have long been a symbol of hospitality and home. If Granny was in the kitchen, chances are there was a pan of biscuits nearby.

Now scones? They’re a little heartier and slightly sweeter. They have a more crumbly texture and are often filled with fruits, chocolate, cinnamon, nuts, or glazes. While scones have roots in places like Scotland and Ireland, they found a natural home here in Appalachia too. Many of our mountain families came from Scottish and Irish ancestry, bringing their baking traditions with them. Over time, those recipes blended beautifully with Appalachian kitchens and simple pantry ingredients.

In many ways, scones fit right in with mountain life:
Simple ingredients.
Made by hand.
Best enjoyed with coffee and good company.

Whether you’re a biscuit lover or a scone fan, there’s something mighty comforting about homemade baked goods shared around the table. And we’re grateful every single day that y’all allow us to be a small part of those moments.

Our cake artist, Isabella Cole, whipped up a variety of her famous cake cups, and our pie & pastry specialist, Nancy Cole, has brought back the sweet cream pastries! This week she’s also debuting her brand new sandwich bread and Sunday Dinner Rolls, and y’all… they smell just like home. 🏡

We hope you’ll take a moment this week to treat yourself to something sweet — or maybe even a little savory.

While we were stocking shelves, we spotted that Buddies Bakes made a delivery too! I’ll personally tell y’all that their Honeybun Cake is one of my absolute favorite treats. And as always, Ms. Heather has the store packed full of the prettiest vegetables and the sweetest strawberries, cherries, and peaches. We’ll definitely be making a stop ourselves this week. 🍓🍑

✨ Meet the Crew Behind Appalachian Baking Co. ✨

Have y’all ever met the folks behind Appalachian Baking Co.? Well, keep in mind… the only picture I could find of all three of us together was from a girls trip to Vegas about 3 years ago. And let’s just say… I’ve put on a few pounds since then. 😂

From left to right:

🍪 Amy — the one who had the original wild idea to start this little bakery
🎂 Isabella — our cake artist extraordinaire

Now let me properly introduce us.

🥧 Nancy Scearse Cole

Well, I’ve known Nancy since birth — she’s my Sissy and truly my very best friend. Through all these years, I’ve somehow managed to love her more with every passing day. She is married to the love of her life, Aaron, and together they’ve built a beautiful family with three wonderful children and two precious grandchildren.

We grew up side-by-side watching our Momma pour her heart and soul into feeding her family every single day. For Momma, there was just something peaceful about standing in the kitchen making sure nobody left hungry. Feeding people was her love language, and we are forever grateful she passed that gift right down to us.

Nancy has a true gift for pastries and pies, and if y’all have tried her sweet cream pastries, then you already know exactly what I mean.

Then there’s me. One day I woke up and realized that after all those years sitting in Momma’s kitchen — mostly hoping to sample whatever she was cooking — I never actually learned how to bake. 😂

That started my journey into learning gourmet stuffed cookies, which somehow turned into baking a little bit of everything Appalachian folks hold near and dear to their hearts.

My husband Bradley and I also own and operate Harness & Son Pest Control, so serving our community is something deeply rooted in who we are. To be blessed with a second business that allows us to continue loving on people and giving back to this community is more than we ever dreamed possible.

We have two very handsome boys — and yes, if you happen to see them out and about, feel free to remind them just how proud their Momma is and how much she loves them.

🎂 Isabella Cole

And sweet Isabella… well, I’ve known her since the day she was born too. She’s Nancy’s daughter, my niece, and one of the greatest blessings in our lives.

She jumped headfirst into helping run this little bakery and never looked back. I hear so many folks talk down about today’s youth, but Isabella is living proof that there is still so much good in this world. She loves Jesus, Appalachia, and her furry best friend Maverick with her whole heart.

And God has placed a wonderful young man in her life who absolutely adores her, and we thank Him daily for the blessings He has poured over their relationship and future.

🤎 Appalachian Born & Raised

All three of us were born and raised right here in Appalachia, and we value this community the way our ancestors taught us to. Around here, you never meet a stranger, and there’s always room at the table for one more plate.

That spirit of hospitality, love, and community is at the heart of everything we bake.

We hope y’all come out and visit us this market season as we return to the Cumberland Gap Small Farmers Market starting in June. One of our favorite parts of this journey is getting to meet our customers and truly know the people we’re serving.

Thank y’all for loving our little bakery the way you do. We pray every loaf of bread, every cookie, every cinnamon roll, and every pie reminds you a little bit of home. 🤎

Appalachian Baking Co. would like to send a heartfelt thank you to the Claiborne High School Band for trusting us to provide the dessert table as they celebrated a year full of hard work, dedication, and accomplishments. ❤️🎶

These young musicians are truly something special. The countless hours of practice, performances, competitions, travel, fundraising, and commitment they pour into their craft does not go unnoticed. They are some of the hardest working students we know, and it has been an honor to support them.

We are especially excited to watch them head to Philadelphia to represent the state of Tennessee during America’s 250th Celebration! What an incredible opportunity and well-deserved honor for these students and directors.

Did I remember to take a single picture this week? Absolutely not. 😂 But I can promise the goodies are there and lookin’ mighty fine!

Now, we also want to take a moment to talk about our no-bake key lime pie from last week. We heard from several of y’all that it missed the mark, and we are truly sorry for disappointing you. One thing about Appalachian Baking Co. — we are always learning, always growing, and always wanting to serve y’all the very best we can.

After some kind advice and shared knowledge from a customer, we believe we’re finally headed toward a more classic key lime pie recipe. This week there are only 4 slices in the cooler because we’ve had lots of “official taste testers” helping us figure out exactly where we needed to improve. 💚

If you purchased one of the no-bake versions and were disappointed, please send us a message. We would be more than happy to make it right. We never take your support lightly, and we are never offended by the opportunity to grow and improve.
