Mostly Asian themed desserts including: tier 1 - black eye coffee cupcake | tier 2 - bittersweet & chili chocolates; white chocolate with dried mango, toasted cashews, and crushed pink peppercorns | tier 3 - fortune cookies (with snarky fortunes) | tier 4 - mango and five spice donuts with chocolate ganache glaze; black sesame rice krispie treats | tier 5 - mango cheesecake cups; coffee boba shooter with ube crinkle topper.

Finally tried my Russian flower tips to decorate cupcakes. Planning to use these for my MIL’s 90th birthday celebration in October. For now, these will go to a BBQ in just a bit. Cupcakes are vanilla-coconut with vanilla buttercream flowers.

Celebrating some milestone birthdays.

“Almost 50” are banana pudding cupcakes - nilla wafer at bottom of banana cupcake, topped with vanilla pastry cream, then whipped cream topping.

“Hello 21” are cookies and cream cupcakes with bittersweet chocolate buttercream.

Looks like I forgot to share our Easter dessert! Roasted strawberry cake with strawberry cream cheese frosting from a 2021 edition of ”Bake” magazine. Not too bad - cake was a dense style. Not sure roasting the strawberries added much to the bake or taste. But still tasty overall.

Jen asked if I could recreate her husband’s favorite restaurant birthday cake that the restaurant no longer makes. So here’s my rendition of J.C.’s “Sunshine Cake”. Citrus sponge cake topped with mango mousse and mango gel. Served with orange creme anglaise and lime scented whipped cream. It was given 👍🏻👍🏻 by all. 😅😍

PB&J Chocolate Cake to celebrate Shelley’s retirement. Chocolate cake, fresh-made Plant City strawberry filling, peanut butter buttercream frosting, and bittersweet chocolate ganache. Topped with peanut butter cups and chopped peanuts. I was afraid it would be too sweet, but it was really a great combination.

Recently made the Milk Bar Birthday Cake. Honestly, it wasn’t my favorite tasting cake. Cake was a bit dry and frosting was quite sweet. But loved the addition of the cake crunch as part of the frosting layers. Eager to try a slice of the real thing when we visit NYC.

This was my very first baking project that I did for someone outside the family. I was so nervous!
