Mmm…what do we have here…. the Barcelona Churro Cookie. Soft & doughy with a chocolate center. The traditional Spanish Churro is a breakfast doughnut type pastry. It has a doughy center, rolled in granulated sugar and dunked in chocolate sauce. I turned this favorite treat of mine into a cookie by stuffing the center with chocolate. 😋
