Dark Chocolate Caramel Mousse Cupcakes
The weather outside may be cold and blustery, but I think I may have broken a sweat toiling away this morning in the kitchen. These beauties were a special request for a special person I'm thankful to call a friend. I knew I wanted to make something unique and hopefully memorable, so I tired a few new things.
I was up at 7am and started with the caramel. My new all clad pot made it so easy. Very even heating = a silky smooth caramel. The twist on this caramel is the smidge of coffee and vanilla bean flavoring I included. They make for a more robust flavor. Sssooo, amazing!
After a couple of cups of coffee myself, I moved on to the Ghiradelli dark chocolate mousse. It calls for a FULL bag of the 60% cacao chips AND coffee. Yum! I realized I had not really ever made a mousse. I think I've been a little intimated (yes, I am intimated by some recipes), but I found one that was quite simple.
To keep with the theme of coffee as a "secret ingredient", I found a dark chocolate cake recipe that also included coffee and buttermilk. I L.O.V.E. baking with buttermilk. This recipe has a full cup of coffee and buttermilk, so it's really smooth and bold.
Finally, I finished up with the dark chocolate buttercream with (of course) a hint of coffee. With all the components done, I moved on to assembly, all before stopping for lunch. The mousse and a bit of caramel was nestled into the center of the cupcake. The buttercream, more mousse, and the caramel complete the dark lovelies like a crown. The coarse sea salt dusted on top is like the snow many of my fiends and family are seeing out their window today.
