AT TC Paris, nobody (and we mean NOBODY) comes close to what we do with the French Macaron. Offering up over 47 different flavors rotations yearly (and growing all the time). We ship our water in from France just to make our macaron shells and use amazing ingredients shipped in from all around the world.

It’s been almost 6 years, since I made my last French Macarons. Bringing this ol Chef out of retirement, for the holidays (baking for family and friends), it sure brings back some great memories.

We accomplished some amazing things, as the Underdog. But, what I think I miss (and cherish the most) are the great customers that I was able to meet and get to know over the years.

I don’t miss the chaotic holiday baking we took on, at TC Paris. It’s a lot more relaxing to bake on a small scale at home. But I do miss all of you !!!

TC Paris has closed. We actually closed back in January. I had good intent to post an announcement, back then .... but there was a lot happening and many stressful situations to deal with. And, therefore I apologize for such a long delay in posting a notice.

Although, I am very proud of our commitment to excellence in baking, we just couldn’t gain the following that we needed in Albany or our newest home in Saratoga. After a long struggle, it was well past the time to sadly pull the plug.

That being said, I love all of our customers that have been there for us. Both in Albany and Saratoga. I enjoyed meeting all of you and sharing. Many of you met my family, and shared in the loss of my mom, two years ago. And I will never forget that. It was a pleasure knowing all of you. I am forever thankful.

Special thanks to Chef Brianne - who was the “awesomest” to work with. I wish you all the success in your new adventures.

Thank you to all the staff who have come and gone over our 5 years. You are all part of the vision of quality that we strived so hard for.

Thank you to every single customer that came through our doors. I take away some amazing memories.

Thank you Alan and Mary .... who have been with us since opening day! I will miss making your Rum Cakes!

Thank you to our gracious landlord, who was so supportive and just one of the nicest people I’ve ever met.

I think .... the only thing I won’t miss is “Uncle Mings” (can I say that? Lol). I don’t ever want to smell shrimp and broccoli again. Like ..... ever. Lol.

As for me, who knows where I might pop up. I have been taking time to focus on me and my health. Hitting the gym 2 hours a day and have lost over 48 pounds. Currently in the best shape of my life.

Shortly, we will disable this Facebook account. So that we don’t confuse customers.

It has been an amazing experience. I will never forget

A very special request from TC Paris

My mom, also known to many as "B", is at Albany Med, fighting for her life. Suffering heart failure, kidney failure, blood clot damage and possible brain damage from her heart failure. She is fighting a difficult battle.

Many of you may remember B, when she worked the store at our Henry Street location during our first year in Saratoga. She only wanted the busted Macarons as her pay. Pistachio is her favorite.

You may have noticed that our store is a little empty these days. Not a lot of Macarons to pick from. I'm asking that our customers and friends be patient and understanding as we struggle to get through a very difficult time. As I am in the kitchen much less this past week... and the days to come. B needs me right now.

TC PAris needs your support and understanding that we are facing some difficult days. My mom needs all the thoughts and prayers she can.

We will still do our very best to accommodate orders for the holiday season, however we may need to limit our capacity at some point.

How I spent my summer vacation . . .

A fresh baked, all butter croissant . . . stacked with light fluffy (real) scrambled eggs, sliced fresh tomatoes and Basil Pesto sauce.

TC Paris turns sandwiches into an EVENT. Things are about to get . . . .Ridiculous. Join us Friday (June 17th) for the launch of our re-designed ALL DAY menu.

Let's take a peek

1. The Hathorn: Fluffy scrambled eggs, applewood smoked bacon and sharp cheddar on a fresh baked croissant, served with TC Paris "sandwich dipping sauce"

2. The Orenda: Fluffy scrambled eggs, sauteed steak, American cheese, carmalized onions and Siracha aioli on fresh baked croissant.

3. The Governor: Fluffy scrambled eggs, Turkey Sausage, Sharp cheddar, honey mustard aioli on fresh baked croissant.
. . . and many more! All sandwiches under $8.00 and available ALL DAY! Call ahead for lunch to go. It's like wishes do come true!

Everything changes next Friday, June 17th. A completely redesigned menu from the ground up, redefining TC Paris.

A new series of specialty sandwiches, available all day long. Like The Orenda (sneak peak below): Fluffy scrambled eggs - made with real eggs, sautéed beefsteak, melted American cheese, caramelized onions and Siracha aioli on our butter croissant. Say what ???

Or.... You can always grab one of those soggy egg mcmuffin thingies ..... Down the road, if that's what you like. We're totally not offended. But we will talk about you behind your back. And it won't be pleasant.

Our new menu includes a full line of amazing sandwiches - all between $5.95 and $7.95.

TC Paris Cold Brew. It's Official. Bold, but steeped slow, overnihgt to ensure no bitterness. Our signature coffee cold brewed, with a splash of cream and condensed milk for a very gently-sweet refreshing beverage. Sure, you can ask for it black - if you usually don't like things. We wont snicker.

It's summertime Folks. Cold Brew Season.
