Just pulled Grandma's Lemon Meringue Pie out of the oven, and it looks divine! 🍋💛 The perfect balance of tangy and sweet. Can't wait to dig in!
Ingredients:

1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar
Directions:

Preheat oven to 350°F (175°C).
To make the lemon filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice, and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter.
Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
To make the meringue: In a large glass or metal bowl, whip egg whites until foamy. Gradually add 6 tablespoons sugar, continuing to whip until stiff peaks form. Spread meringue over pie, covering the filling completely.
Bake in preheated oven for 10 minutes, or until meringue is golden brown.

"DO YOU WANT TO WALK IN A PRO-COMPETITION"
Prior to 2010 Smokinwilly Squealer's Championship BBQ Team
I'm sure were like many of you who are trying to decide if you want to take a BBQ class. We made a decision to take the "Swamp Boys BBQ School" and it sure has paid off for us. We were spending lots and lots of money and placing way out of the top 10. Since we have taken the class, we have had 3 Grand Champions, a State championship, 2 reserve grand champions, 3 top 10 team of the year awards, 17 1st place finishes and many 2nd through 10 place finishes. In 2012 we cooked in 17 competitions and only one cook were we not in the top 10. Rub has not ask me to submit this post, but I feel that the "Swamp Boys BBQ School" has done so much to improve our barbecue techniques in a very competitive field of great BBQ teams. Question is: Has taking the class been worth the money spent for the class. For our team, we have won way over ten times the money we paid to attend the school.
