The Finns celebrate May Day with some fresh brewed Sima (a sweet fermented lemon drink) 🍋 Sima takes a few days to brew and when the raisins float to the top its ready to chill and enjoy. Love watching it bubble up!!
We'll be celebrating Vappu with our own Sima and some freshly made Munkki Donuts 🍩 (cinnamon sugar donuts).

First two goose eggs of the season! Geese only lay for a couple of months out of the year during the Spring. One goose egg is equivalent of 3 chicken eggs. They are very similar to chicken eggs in taste, make great omelets (you only need one), the shells are very thick and make great hard/soft boiled eggs.

It's the end of National Sauna Week and I did manage to get one sauna in.
Sauna is my refuge in the storm! It's truly the only place I can relax and forget about everything for an hour or two!

Where are all my Gluten- Free friends?
Today in the test kitchen I worked on 2 different kinds of gluten free nisu. The small braided one tasted much better to me than the bigger loaf.
I have had several requests for gluten free and this is my second attempt. It will still require a bit more tweaking. If anyone out there is a gluten free bread expert- hit me up!!! I'm not ready to throw the towel in on GF yet!! Let me know your thoughts!! What is your favorite GF flour? 🤔

Musta Munat!!
Black eggs. Our lovely Cayuga Ducks lay these various shades of black ⚫ 🥚 eggs! I am a bit obsessed with them and our other colored eggs.
As the Cayugas continue to lay, the eggs will fade and get lighter. But for the beginning of laying season, we get to enjoy the black eggs!
