✨ The final product ✨

As someone who works outside of the home and mothers 5 children inside of the home, I have to work on these in small doses. On day one I made the tart dough, wrapped and refrigerated it. That same day I made lemon curd and pastry cream. The next day I made the macaron shells and the tart shells. The day after I made the tart fillings and filled all the products. Trusting the process is hard and it’s messy but when it comes together so beautifully it suddenly becomes worth it. As do most things in life 🥰

**Confession time**

I don’t want to talk about this cake, but I need to talk about this cake. This cake fell because of a mistake that I made on the way to the venue. I always bake multi-tier cakes in advance and freeze them because that is what’s best for cake stacking. I did that. Or I at least tried to. The bottom tier is a date and walnut cake, not your every day ingredients that I always have. I make a special trip to get the stuff. The day before the cake is due I got off work and baked it so I could freeze overnight. It didn’t rise. Sometimes in the baking world your baking soda or baking powder will just stop working for no good reason and with no warning. That’s what happened. I didn’t have the ingredients to fix it that night, it was already late, I was already tired. I placed a pickup order for early the next morning, got the order, baked the cake the day of, and did my very best. It was refrigerated for 3 hours before I even stacked it. It wasn’t enough. The bottom layer slid sideways during transport and toppled over. It was a disaster. I can’t describe the feeling that I felt walking in with this awful cake that didn’t survive the trip. They were extremely gracious and reassuring. I salvaged the top cake and did what I could with the bottom. I cried the entire way home and maybe half the day. From embarrassment, frustration, sleep deprivation, just utter defeat. It was awful. But here it is. Prior to its downfall, and mine.
