If you are looking for a way to use up discard, this is one of my favorite pantry swaps! Plus it’s completely customizable as far as what you’d like to add in. Let me know if you try it!
✨Homemade Sourdough Discard Granola✨
Ingredients:
* 2 cups rolled oats
* 1 cup sourdough discard (unfed, straight from your starter)
* ¼ cup honey or maple syrup (or sweetener of choice)
* ¼ cup coconut oil (or any neutral oil of choice)
* 1 tsp vanilla extract
* ½ tsp cinnamon ( or more if you love cinnamon)
* ¼ tsp salt
* ½ cup nuts (almonds, walnuts, or pecans, roughly chopped)
* ¼ cup seeds (sunflower, pumpkin, or chia)
* ½ cup dried fruit (raisins, cranberries, or chopped dates)
* Optional: 2 tbsp flax seeds, 2 tbsp coconut flakes, or a pinch of nutmeg
Instructions:
1. Preheat the Oven: Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper or a silicone baking mat.
2. Mix the Wet Ingredients: In a large mixing bowl, combine the sourdough discard, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until well combined.
3. Add the Dry Ingredients: To the same bowl, add the rolled oats, cinnamon, salt, and any optional spices or ingredients. Stir everything together until the oats are evenly coated with the wet mixture.
4. Fold in the Nuts and Seeds: Add your choice of nuts and seeds to the mixture, folding them in gently.
5. Bake the Granola: Spread the granola mixture in an even layer on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even cooking. Keep an eye on it to avoid burning, especially around the edges.
6. Cool and Add Dried Fruit: Once the granola is golden and crispy, remove it from the oven and let it cool completely on the baking sheet. As it cools, it will crisp up further. Once cool, stir in the dried fruit.
7. Store and Enjoy: Once completely cooled, store your homemade granola in an airtight container at room temperature for up to two weeks, or in the freezer for longer storage.
Tips:
* Add-ins: Feel free to experiment with different nuts, seeds, or dried fruits based on what you have on hand. Chopped dark chocolate or coconut flakes are great additions.
* Sweetness Level: Adjust the amount of honey or syrup based on your desired sweetness.
* Crispy Granola: For extra crispy granola, press the mixture down lightly on the baking sheet before baking, which helps it clump together.
