Are these Boules off 60 hours(3days) of cold fermentation too much? Sometimes my customers like very acidic sourdough. But, what about the wild yeast energy during that time. I consistently find that the longer you ferment, the shorter the oven spring. Why? Because wild yeast starts to lose energy after it’s done converting flour into sugars. This is there food, a rave party🤓! These boules turned out really well though in the dutch oven with lot of steam inside the cast iron. Keeping the crust soft enough for a maximum rise and expandability throughout the bake. Sourdough is a science, so for all home bakers out there, watching, feeling, and experimenting with times and temperatures will help you in the long run.

Alright, well here they are! The last Superseeds on the peel. I’m winding down on Maui and getting ready to move on and start a new adventure in Steamboat Springs, CO with the wifey and pets. The new Maui Artisan Sourdough Creations LLC will still bake fresh Sourdough, but will also combine slow roasted meats and hopefully work with farms to showcase there local produce. We’re gonna miss Maui, but after years of owning a business here, it’s time to get out of my routine and create new challenges and more opportunities✌🏼🤠🤙🏼.
