I’ve been thinking a lot about baking, and while I enjoy it, I can’t do it all the time, for family and health reasons. I also want to get back to my original purpose which is tea and cake. Hosting afternoon tea with my friends is one of the best things to do to stay sane and gain connection. I love making all my little treats but tea and cake is where I will be focusing in the future.
If you and your friends would like to host an afternoon tea event in a casual way or super fancy, I got you. There are simple ways to enjoy the art of tea and cake…a pot of tea and a slice or two of cake. I got you. So reserve your tea and cake now for the upcoming holidays and to treat yourself as you should - we all deserve a space to breathe and inhale a bit of sponge cake.

Carrot chocolate spice muffins (gluten free, grain free, dairy free, egg free) Makes around 6-8 muffins.

In a stand mixer add:

3 eggs (or egg replacer)
1/2 c apple sauce
1/4 c avocado oil
3/4 c brown sugar
1/4 t salt
1 tsp vanilla

Dry mix together in smaller bowl:
1/2 c tapioca flour
1/4 c h**p protein (or your favorite protein powder)
1/4 c potato starch
1/4 c almond flour
1T coconut flour
1 t baking powder
1/4 c cocoa powder
1 t pumpkin spice mix
1 t cinnamon

Alternate: add your favorite spices or none, use zucchini or chopped apples instead of carrot, if you don’t have almond flour add more tapioca flour.
Sprinkle top with chocolate chips or chopped nuts. If you like frosting mix up a glaze with

Mix together and fold in:
1 1/2 c grated organic carrot

Use muffin liners. Approximately 1/2 c off batter for a large muffin. Bake 15 mins at 350°. Cool completely before storing.
Store in airtight container, and refrigerate for up to a week. But they won’t last that long!

Another quick snack to take on the road for breakfast or an easy protein snack. With half a cup of yogurt, plus protein powder, and high protein granola you can get 15-20 grams of protein in your belly!
If you don’t have pumpkin butter, try maple syrup, jam or honey! Enjoy!
