Some October bakes, since we’re halfway through! I’ve been loving my adjusted classic loaf recipe. The addition of 10% more freshly-milled whole wheat flour and the deletion of honey has made the loaves both lighter and more complex.

📣A BIG ANNOUNCEMENT! 📣

Beginning on October 1, we will be consolidating our Hotplate drops to *two per month*, on the first and third Thursdays of every month. This will allow me to get some much-needed projects done around the house, and beyond! Additionally, burnout is real in the cottage bakery world, and I don’t want to get to that point. I love baking bread and sweet treats for each of you, and want to keep doing it! 👩🏻‍🍳 There will be occasional variations to this schedule due to holidays, etc, but in general, drops will be on the first and third Thursdays. 📆 Drop text alerts will continue to go out on Fridays as usual, so make sure you’re subscribed so you never miss a sale (link below)!

‼️NOTE:‼️ Cookies and brownies will continue to be delivered to Skyland Farms every Wednesday, so if you need your fix on an off week, you can always stop in there and grab something to tide you over! 🍪

Orders for our September 24 drop are open! This menu includes all of the usual staples, plus our two favorite pumpkin items…pumpkin chocolate chip bread and pumpkin spice scones.

Fun fact: the first time I tested this pumpkin chocolate chip bread recipe, it was on our grill the day after Hurricane Helene. I was mixing up the dough when the power went out during the peak of the storm (maybe not the best idea I’d ever had, but it was rainy, and a little dough therapy seemed like it was warranted). Fortunately, you can very easily “grill” a loaf of sourdough bread if you don’t mind putting your Dutch oven in the grill. Your loaves, however, will be baked the usual way in our three-deck brick bread oven. 😆

Most bakers I know are always trying to improve their craft and their product. I’m no different. When I first started this bread business, I had a favorite classic sourdough recipe that contained a teeny bit of honey (2% in baker’s math, if you like details). It’s a great recipe! But over the past 2+ years, some potential customers have requested no honey, either because they’re vegan, or they’re watching their sugar intake. I’ve also felt a pull towards adding more freshly-ground whole wheat flour to my classic loaves, because I have the mill and might as well use it! And because more freshly milled flour increases the health benefits of your bread. 🌾

So, starting with the September 24 drop, all classic loaves (and breads based on the classic, like jalapeño cheddar, blueberry, parm black pepper, etc) will all be honey-free and contain 12% freshly milled whole wheat flour.

Three simple ingredients—flour, water, and salt—and amazing flavor! Our next drop is available to view and orders will open on Friday at 10am. Sign up for text alerts so you get first dibs on the goods!
