The Bakery & Curated Pantry at 1871 Our story
1871 BakeHouse started in 2022 in the kitchen of our Victorian era home. Each handmade with care. Products may contain allergens.

Inspired by the rich history surrounding us, we began baking small batch, traditionally inspired breads and pastries. Before well-equipped home kitchens, bakehouses offered people a place to gather and bake bread in wood-fired ovens. After helping to keep the fire warm and sharing baking tools, they would carry the loaves on wooden planks back to their families and neighbors. These bake houses, and the food being made, were the heart of the community. We would like to carry on the tradition of caring in each small batch of baked goods that comes from our oven. From our home to yours.

1871 BakeHouse is a cottage bakery, baking right from our home kitchen. Products are produced at a private residence that is exempt from state licensing and inspection.

There’s something about fig and walnut that just belongs in bread.

Our Fig & Walnut Demi-Bâtard begins with naturally leavened dough, folded with sweet figs and toasted walnuts, with just a hint of rye running underneath it all—not enough to make it a rye bread, just enough to give the loaf a little more depth.

The crust bakes deeply golden, the crumb stays tender and chewy, and every slice lands somewhere between earthy, nutty and gently sweet.

It’s the kind of loaf that doesn’t need much. A little salted butter. A wedge of good cheese. Maybe some honey. Or just tear into it while it’s still fresh.

Some sad news...

Over the years I’ve said, time and time again, the worst day in my kitchen is better than nearly any other (marrying my wonderful husband, aside). Today, life put that notion to test, in an all-too-real way.

I had plans. Bigger than big plans. They’ve been in the works for weeks and they were going to change our little world. However, this afternoon, they came to a screeching halt. Along with my new, mix-more-than-ever-before, mixer. It was this shiny piece of mechanical wonder that was going to make the impossible possible. The usual, a mere memory. And propel our little adventure into a whole new world full of goodness. Then, kat hunk- like my plans and hopes-it was no more.

All starry-eyed wonderment aside, its demise puts us in a real pickle. At this late hour, with a menu full of bread and pastries genuinely taking three days to make, it isn’t possible to carry out. So, rather than be the cause of many disappointed faces, we are postponing the next pop-up at Georgia Dawn’s.

No one starts a bakery (or any small business) for days like this. But they come anyway. So, we want to extend our sincerest apologies, along with a promise. Give us a little time to sort through the mayhem, and we will bring all of those plans to an even-better event. From an exciting new experience to cases full of pastry, we will bring you the very best of 1871.

In the meantime, Georgia Dawn’s still has a wonderful shop full of amazing, local finds. They’ll be open from 10am to 4pm, for a great way to enjoy a Saturday.

Thank you for your understanding, we'll see you soon.

We are so incredibly excited to be back at Georgia Dawn’s, for even better Saturday morning on Sparta's growing North Main Street! If you haven't checked in out in a while, its becoming a wonderful little part of Sparta's square. But, this time, we're going to do it even better. We've spent the last hand full of weeks thinking, working, and testing new things, way out of our normal box, and we're thrilled about bringing them to you. We'll always have freshly made and baked hearth breads and pastries folded with the very best flour and butter (in fact, we're planning an even larger bake this time around). In addition, on August 8th, we're going to bring you a better way to enjoy a Saturday morning at Georgia Dawn's. Yes, we're doing a little pop-up reinvention, and it's almost time to put our ideas in your hands- along with a truly amazing pastry. See you soon!
