of bread making involves using the best ingredients and controlling the process of fermentation. Temperature control is the key to slowing down fermentation and allowing the wheat gluten to fully develop a robust flavor. Each loaf of bread requires a minimum of five hours from mixing to pulling it from the gas fired oven.
