It’s been too hot this summer for cakes and cookies so I made more truffles. They’re Jackson Pollock-esque because I was lazy and didn’t want to use the airbrush. The black and white ones are a vanilla ganache with cocoa nibs. The red and yellow ones are a raspberry lemonade truffle

I wanted these to rainbow something either as a gradient or each brick be a different color. Then I remembered what happens when I airbrush that much and decided against living in a cocoa butter cloud for hours. I had mini chocolate cake layers left over from an experiment, so I doused them in Bailey's and iced it in a Bailey's Swiss meringue buttercream. The end result is a mini (4" cake) for St. Patrick's Day

Yet another ADHD idea, a chocolate mousse cake. This is iteration #2 which still needs work but is a lot better than the first try. The layers from the bottom up are a bourbon brownie base, semi-sweet chocolate mousse, and a white chocolate mousse

I would love to say I had this idea for awhile, but no it came from an ADHD "wave" (aka my meds wearing off at night). This is probably one of my favorite things I have created, it's a tiramisu cake. White cake soaked in coffee simple syrup, dark milk mocha ganache, and a vanilla bean mascarpone Swiss meringue buttercream
