Last month we did a pantry/freezer challenge. Did not eat out, did not go to store except for a few fresh produce items on wic. This month im focusing on quick easy dinners, and stocking freezers back up with convenient foods. Snacks, easy lunches for kids, simple dinners etc. Next month we will eat what we have and then j will be home to coom when i have baby. We have a plan for freezer meals the kids can grab out and throw in oven while im.still healing and j goes back to work.
Today i started with bagel bites. I made 72, 60 are in freezer before i bag them up. This cost me less than the same amount of the mini bagel bites at the store, and these are easily 2 to 3 times the size. I also have inhredients left over.

Our Christmas Eve tradition. Some of our favorite appetizers and watching movies. I love this time with my family.

I also had a bunch of ripe bananas that needed to be used up. I made churro pan fried bananas, bana smores, and peanut butter banana cookies.

We made homemade cinnamon rolls last night too.

I made my husband low sugar peanut butter cookies for his birthday. One had biscoff butter in the middle (not as low sugar) and the other had a low sugar strawberry jam that I made from scratch. Then my son made homemade ice cream to go with it. He made vanilla and dad asked him for peppermint so he made that too. No pic of the peppermint one, but it was pink.

So I have been doing a "pantry challenge" this past week. Trying to use what we have in the fridge, freezer and cabinets. I have been doing a lot of baking and creative cooking. A few of the things we made were muffins. We made a pumpkin cream cheese muffin. My youngest made the cream cheese filling by himself. We could have pushed it down a bit more but they were delicious anyway. The second was a low sugar pumpkin cherry muffin. My oldest requested it, since he didnt love the cream cheese, and he made it by himself with my instruction. The last one is a low sugar strawberry banana muffin. It used up some bananas that were extra ripe and strawberries out of the freezer. My kid thought i used a muffin mix when he saw them. Nope kid, all homemade. I will share some of the other meals and such that we have made even though they wont be things I can make to sell to others.

My wonderful husband helped me peel and slice all the rest of the apples. 3 gallon bags for the freezer for now. A 9 quart and 6 quart pot full of apples cooking down. Ill be watching those all night and canning applesauce tomorrow. Also will be working on peppers tomorrow.
