Let’s talk royal icing consistencies 🎂. I work with two different consistencies or thicknesses, flood which is a 10-15 second icing and piping which is a 20-25 second icing. What do I mean by “second”, well let’s imagine you have a bowl of icing that has settled nice and smooth 🥣, now run a butter knife🍴through the middle of it, pull it out, and start the timer ⏲️. The seconds it takes to get back to smooth determine if it’s a flood (settles quickly) or a piping (takes longer to settle). Why use two different thicknesses? If I’m “flooding” or filling a larger area and don’t want to fight with my icing I will use the 10-15 second icing, if I’m doing small details that need to hold their shape, like lettering or tires in this case, I’ll use the piping icing.
