A look back at what was served at the table.
Chapter I had five courses, each built around ingredients that felt familiar, seasonal, and close to home, with a few surprises along the way.
FIRST COURSE
Heirloom Tomato Gratin
Local Herb Butter · Seasoned Sourdough Crumb
A simple beginning built around late-summer tomatoes, herbs, and bread.
SECOND COURSE
Crab & Iowa Sweet Corn Pesto
Pine Nuts · Baby Spinach · Angel Hair · Pecorino
Sweet corn met pesto, pasta, and crab for a course that felt distinctly Iowa without being quite what you'd expect.
THIRD COURSE
Buffalo Pot Pie
Flaky Crust
Comfort food at heart. Warm, savory, and tucked beneath a flaky crust.
FOURTH COURSE
Petite Pork Tender Filet
Fire-Roasted Tomato Relish · Fancy Carrot · Whipped Potato · Merlot Jus
The main course, pork surrounded by the kind of things that belong beside it.
FIFTH COURSE
Brûléed crumb. Cheesecake
Blueberry Compote · Fresh Blueberries · Local Honey
And because the evening began at crumb., it only seemed right that it ended there too.
Five courses created for one night, served to one table.
That was the food of Chapter I.
