here's a gluten-free recipe that is mine that I developed over the last two years that everyone really loves is a takeoff of a couple of different recipes
baking content is coming it's been super busy around here so I figured I'd post this
Creamy Sun-Dried Tomato, Bacon & Chicken Pasta — GF!
I promised I’d share some of the gluten-free meals my family loves, and this one is SO GOOD. ❤️
Fair warning: I’m a measure-with-your-heart cook, so measurements are approximate. 😂
Ingredients:
4 lbs thin-sliced chicken breast • GF flour • ¼ onion • LOTS of garlic • olive oil • 4 slices bacon • 2 Tbsp butter • 1–2 cups chicken broth • 3 cups half & half or heavy cream • ¼ cup sour cream • 8 oz sun-dried tomatoes • 2 Tbsp tomato paste • Parmesan • fresh basil & parsley • salt, pepper & seasonings • 1 box GF spaghetti
How I make it:
Season GF flour with salt, pepper & your favorite seasonings. Dredge chicken and brown in olive oil with onion and garlic. Remove chicken and set aside.
In the same pan, melt butter and whisk in a few tablespoons of fresh GF flour to make a roux. Add chopped bacon, then slowly stir in chicken broth.
Add cream, sour cream, sun-dried tomatoes, tomato paste, Parmesan, basil, parsley and seasonings. Bring to a gentle simmer.
Put the chicken back into the sauce and simmer on LOW for about 40 minutes, until the chicken reaches 165°F. Add a little chicken broth if your sauce gets too thick.
Cook your GF spaghetti while the chicken simmers. Drain and toss with a little olive oil.
Serve the chicken and that gorgeous creamy sauce over the pasta and top with freshly grated Parmesan & basil. 🤌❤️
You can substitute cream cheese or mascarpone for the sour cream—I LOVE mascarpone when I have it!
And remember: garlic isn’t measured with a spoon. Garlic is measured with your heart. 😂🧄❤️
