We have been working on these for a little while for a new line of product:

They’ll be offered by the slices and made to order whole … 10” tarts … we’ll introduce 3 to start and then add new one once every two weeks … we’ll have the classics and moderns and some of our own makings …

We had a rather large batch of croissants made with an incorrect flour mixture in the middle of the week … the pastries ...

We had a rather large batch of croissants made with an incorrect flour mixture in the middle of the week … the pastries were flaky but the crumbs were rather tough, almost like a pizza quality … it took a little time to figure it out, one of our new helpers used our flour mixture for focaccia to make the dough for our croissants because someone mistakenly swap the lids with labels on the bins. We apologize if you happened to be served one of those. It’s been a bit hectic for as we are training new staff while trying to produce new products… lesson learned … labels should be attached to bins and not lids: don’t ask trainees to assist with the main product lines until they can figure a few things out.
