About a month ago I was contacted by a distraught local mom after her cookie order was cancelled on her a mere 3 days before her party. I was so happy to be able to get an order together for her on short notice so her son could have some cookies for his birthday!

Today, I finished another order for her, this time for her daughter, and this time more planned out! Every child deserves a touch of something special and sweet on their special day and I am HONORED to be able to do that for these kiddos.

Let’s talk about frosting.

Were you one of those kids who used to lick all the frosting off of a cupcake and throw away the cake? Because SAME! 🧁
As I’ve gotten older and my tastebuds have changed though, I find most frostings sickly sweet and chemical-y tasting.
After I started making cakes and cupcakes myself, I made it my mission to find a frosting that wasn’t overly sweet but still looked as creamy and smooth, held its shape while piping, and didn’t take too long to make.

Enter: Swiss Meringue Buttercream 🎉🎉

Unlike standard American buttercream which only has 2-3 main ingredients (sugar, butter and sometimes shortening), SMB has a meringue base. Pasteurized egg whites whipped up high with a touch of sugar, finished with some real, good quality butter and a hint of vanilla. A creamy, dreamy, light and fluffy frosting that isn’t overly sweet and holds shape just like American buttercream.

SMB has become my go-to in cake and cupcake making. And I LOVE how it’s subtle sweetness makes for a great base for yummy mix-ins like Oreos without being over the top!
