Our sourdough is handmade and thoughtfully fermented over 24hours to unlock flavor, nutrition, and digestibility. Hi, Welcome to Bee In Your Bonnet! I'm Tracy, I love to bake and I am so excited to be able to share my passion with you! I run this micro endeavor with help from my daughters. We specialize in Sourdough bread; most of our bread is sourdough but we do make yeasted bread as well. We pla

n a menu each week and try to add new and exciting items to keep things fresh. The menus are posted on Saturday mornings and then we begin to take orders for the upcoming week. (to place an order, just send us a private message or call 210-781-9122 and we will set up an appointment for you)
We do sell out occasionally and if that happens and you are not able to get on the schedule, don't fret! We always try to make some "Extra" items and we post them around 10:30 AM on pick-up days. They are on a first come first serve basis for same-day pick up. Our pick-up days are typically on Fridays from 3 PM to 6 PM. We will occasionally adjust times and days so please follow us to keep in the know. We love the "simple" life and sometimes post recipes and tips that we have found useful or informative, we hope that you enjoy them too. We accept cash, credit, and debit cards. For larger orders, we request a deposit. Feel free to message us with questions, we are always happy to talk about bread!

Good morning to you! I have been baking up a storm and I am almost ready for you!

Today is pick up day for those of you who placed orders for pick-up on Friday, May 29th. Pick up is curbside between 3 and 6 PM.

Pick up is located at 322 West Krezdorn St, in beautiful downtown Seguin. When you see the "Bee" sign, you will know you are in the right spot!

If you are pulling in from Guadalupe St., please turn around in the church parking lot to orient yourself so that your passenger door is closest to the picket gate. This helps us load your packages into your passenger side door.

We have some "extra" items available for same day pick up, and we will post those at 1030 sharp.

Be advised that our pickup times are between 3 and 6 PM today.

Please be mindful of the neighbors and do not block their driveways.

Please remain in your vehicle and refrain from pulling into the driveway.
Call or text 210-781-9122 to let us know that you are here and we will be out with your order directly. Signs will be out to help guide you through the process.

Annnnd we're back again!

Here is our menu for the week of May 25th, with curbside pickup on Friday, May 29th, between 3 and 6 PM.

Oh, we are feeling peachy this week! McCarty Land Farms brought us a glut of their organic peaches, and we are so excited to share them with you!

We have our Artisanal Peach Jam ready for your breakfast toast, a PB&J, or to add as a topping to your vanilla ice cream. It doesn't get much more summery than that in our humble opinion!

Our Basil Peach & Goat Cheese Sourdough Focaccia is a favorite this time of year as well. All the flavors come together here and send you into bliss!

We also have some terrific loaves this week. Basil Pesto is back, and there are a few of you who are going to be really happy to hear that.

We also have our Tart Cherry Granola Sourdough bread, which has quickly become a favorite.

And who can forget our Tartine Olive Sourdough bread made with beautiful green and Kalamata olives, a hint of lemon, and Herbs de Provence. It's a little slice of heaven!

Our Sourdough Pizza Shells are finally back! Grab some while you can, they freeze beautifully!

A few jams, our Orange Caradom Coffee Cake, and Lemon Oatmeal Crisp Cookies round out the menu.

Make sure to get your orders in early. We can only make so many items, and once they are gone, they are gone!

Please make sure you get a response from me when you place your order to make sure it was received and ensure it will be ready on Friday. You should hear a "sure thing" or "you got it."

As always, we hope you find a little something that you can enjoy with your friends and family this week!

When you place your order, please let us know if you would like a boule or a sandwich loaf; if not, it will be dealer's choice!

If you are unable to make our pick-up times, please reach out via phone call or PM, and we will see what we can do to make sure you can get a loaf!

Hey did you know that you can freeze guacamole?!

How many times have you bought avocados, made some delicious guac, only to find you can't finish it and it's starting to turn that putrid brown color?!!!

For me, it was too many times to count. Summer time is here, and I just love to have fresh guacamole all the time, on everything. It's fabulous with chips, on tacos, on grilled chicken....you know the deal.

Well, I started making it and putting it in these little single or double serving containers and tucking them in the freezer. When I know I am going to want to have some for lunch or supper, I take them out and leave them to thaw on the counter. They come out perfectly bright and fresh, like you just made it. You would never know they were frozen!

Here is my recipe for guacamole. Everyone has their own way, this is just how we do it!

3 ripe avocados, mashed
5 to 7 cherry tomatoes, diced
1/4 small red onion, finely diced
2 cloves freshly grated garlic
1 lime, juice, and zest
Garlic salt & white pepper to taste
Jalapeno or garden salsa pepper, finely diced (to taste)
Cilantro, chopped

*Sometimes, when I am feeling fancy, I add some charred corn

Sourdough Pizza Shells will be back on the menu this Saturday!

Our 10-inch Pizza Shells are par-baked and ready for you to add your toppings. They are essentially fully cooked reaching an internal temperature of 195 degrees, but they are not browned. That is where you come in.

Brush the edge of the crust with olive oil and add a little garlic salt. Then fill with sauce, cheese, and any other toppings you desire. We chose to add sauce and mozzarella cheese then added fresh garden Basil when they came out of the oven.

Bake in a 500-degree oven for 7 to 9 minutes to melt the cheese and brown the crust.

The Pizza Shell is hearty and can stand up to your toppings, it is light and airy and it makes a crisp delicious exterior.

Before baking, these little gems will last on your counter for 2 to 3 days. Alternatively, you can freeze them and have a quick fun meal at the ready! We always keep a few in the freezer.
