I'm Tracy, I love to bake and I am so excited to be able to share my passion with you! I run this micro endeavor with help from my daughters. We specialize in Sourdough bread; most of our bread is sourdough but we do make yeasted bread as well. We pla

n a menu each week and try to add new and exciting items to keep things fresh. The menus are posted on Saturday mornings and then we begin to take orders for the upcoming week. (to place an order, just send us a private message or call 210-781-9122 and we will set up an appointment for you)
We do sell out occasionally and if that happens and you are not able to get on the schedule, don't fret! We always try to make some "Extra" items and we post them around 10:30 AM on pick-up days. They are on a first come first serve basis for same-day pick up. Our pick-up days are typically on Fridays from 3 PM to 6 PM. We will occasionally adjust times and days so please follow us to keep in the know. We love the "simple" life and sometimes post recipes and tips that we have found useful or informative, we hope that you enjoy them too. We accept cash, credit, and debit cards. For larger orders, we request a deposit. Feel free to message us with questions, we are always happy to talk about bread!

Well, good morning to you! It's Fri-Yay once again and you know what that means.....

Today is pick up day for those of you who placed orders for pick-up on Friday, August 28th. Pick up is curbside between 3 and 6 PM.

Pick up is located at 322 West Krezdorn St, in beautiful downtown Seguin. When you see the "Bee" sign, you will know you are in the right spot!

If you are pulling in from Guadalupe St., please turn around in the church parking lot to orient yourself so that your passenger door is closest to the picket gate. This helps us load your packages into your passenger side door.

We have some "extra" items available for same day pick up, and we will post those at 1030 sharp.

Be advised that our pickup times are between 3 and 6 PM today.

Please be mindful of the neighbors and do not block their driveways.

Please remain in your vehicle and refrain from pulling into the driveway.
Call or text 210-781-9122 to let us know that you are here, and we will be out with your order directly.

Signs will be out to help guide you through the process.

What is a Whoopie Pie anyway??!!

A LITTLE WHOOPIE PIE EDUCATION…

Because not every sandwich cookie is a whoopie pie.

A traditional whoopie pie is actually two little cakes—soft, tender, and pillowy—with a generous layer of sweet, fluffy buttercream tucked right in the middle.

Cake. Buttercream. Cake.

And while there’s plenty of debate about exactly where the whoopie pie was born, this beloved little hand-held cake has deep roots in American home baking and Southern food traditions. It’s the kind of dessert that feels like it came straight out of somebody’s grandmother’s kitchen: simple, indulgent, handmade, and meant to be eaten with your hands.

And that's is what we're making at Bee in Your Bonnet.

This week, our Apple Cider Donut Whoopie Pies are made with soft apple-cider-donut-inspired cakes, sandwiched around a luscious buttercream filling.

They're little handmade cakes.

And they're absolutely delicious.

So if you've never had a real whoopie pie before, they will dot the menu throughout the holiday season, so keep your eyes peeled!

Good morning! We're baaaaaaack!

Here is our menu for the week of August 24th, with curbside pickup on Friday, August 28th, between 3 and 6 PM.

We have some fun Autumnal flavors for you this week! Starting off with our Apple Butter. I have to admit this is one of my least favorite spreads to make because it takes so long. But the end result is magnificent! Perfect on your breakfast toast, over vanilla ice cream or to make your Apple Cider Donut Whoopie pies a little "extra"!

Speaking of Whoopie pies we are introducing our Apple Cider Donut Whoopie pies this week and I really think you are going to love them!

We also have some of your favorite loaves, Sweet Molasses Brown Bread, Apple Pie Artisan Sourdough and the belle of the ball, Maple Pecan!

I can't wait to see you and hear what you have been up to while we have been away on our oven Odyssey!

Make sure to get your orders in early. We can only make so many items, and once they are gone, they are gone!

Please make sure you get a response from me when you place your order to make sure it was received and ensure it will be ready on Friday. You should hear a "sure thing" or "you got it."

Sourdough Sweet Molasses Brown Bread

This is probably the best loaf of bread I have ever made, by a mile.

I have been trying to recreate that wonderful brown bread that you get at a steakhouse, but I wanted it to be sourdough and a little healthier. And by George, I have done it!

This loaf is a 50/50 whole wheat loaf with whole grain oats, molasses, and wildflower honey. It is a long ferment sourdough with a rye starter. The flavor is nutty and complex to say the least.

I can not wait for you to taste this one! I had a slice with a smathering of salted butter, and I had to sit down for a minute!
This loaf would be superb with our Apple Butter.....

Bee Balanced post incoming!

Clean eating doesn't have to be boring. I have lost 14lbs in about 6 weeks. No shots, just eating in a calorie deficit and working out at home. But one thing about me, I am going to eat! I will always want a delicious little snack.

Here is my take on a lighter version of Spinach Artichoke Dip. It has some fiber and has a decent amount of protein. The traditional version can run around 330 calories for a 1/4 cup.....let that sink in!

My version, 1/4 cup, has around 52 calories! 4.5 grams of protein, let's be honest, you are probably going to eat more than 1/4 cup!

One of my favorite ways to enjoy it is spread on a baked tostada shell, topped with sliced chicken breast. I have been on a real tostada kick lately. I will share some of those recipes with you too if you would like. Just let me know in the comments.

SPINACH ARTICHOKE DIP, BUT MAKE IT BEE BALANCED.

You know that creamy, cheesy spinach artichoke dip that mysteriously disappears at every party?

Yeah. That one.

Except I gave it a little Bee Balanced makeover.

Instead of relying on cream cheese and mayo for all that creamy goodness, this version uses 2% Greek yogurt + 4% cottage cheese — blended until silky smooth — along with spinach, artichokes, garlic, red pepper flakes, and some Parmesan cheese.

So you get:

Creamy
Cheesy
Garlicky
A little spicy
Protein-packed
And considerably lighter than traditional versions

And honestly? You'd never guess there's cottage cheese in it.

Serve it warm or cold with your favorite crackers, toasted sourdough, veggies, or — let's be honest — a spoon. I like the Crunchmaster Rice Crackers; they are super crunchy and nutty and have great macros.

Because Bee Balanced doesn't mean giving up the foods you love.

It means finding a way to make them work a little harder for you.

Good morning! Rise and shine!

Here is the news from the Hive; the roadwork persists to my dismay. I wonder every day if it will ever end....

Thankfully, there was a pause in the road disruption long enough for my beautiful Kucht dual fuel range to be delivered on Friday. I hesitated to say a word until I knew it was fully operational, given the ordeal that transpired to get her here. She is beautiful and works like an absolute dream.

My Combretum indicum (Rangoon Creeper) is finally in bloom, and that just makes my heart sing!

In light of everything being back in order, we will post our next menu on Saturday, Aug 22nd at 1030 AM here and on Instagram with a bevy of fall treats for your enjoyment!

A Little Bee Update…

Well, friends… I’m still here! And I promise, I have not abandoned you.

I’ve been a little quiet lately because I am STILL waiting on my new oven. What started as a simple “buy an oven and get back to baking” has turned into quite the adventure.

The first oven was lost somewhere along the way.
The second one arrived damaged.
And now… we are patiently waiting for Oven #3 to make its grand entrance.

At this point, I feel like I should be sending out baby shower invitations.

As frustrating as this process has been, I’m trying to focus on the sweet part: when that oven finally arrives, we are going to hit the ground running!

And what better way to welcome back fall than with ALL THINGS APPLE.

I’m already dreaming up the first fall menu, and here’s a little sneak peek:
