As Zylberschtein’s celebrates our 7th year of serving our community of Pinehurst and Seattle, the reality of the restaurant landscape is increasingly difficult to navigate. Our sales are down 40% this year, and our outlook is grim.
That is why, as of May 4th, we are making the incredibly tough decision to reduce our operating hours. We will be open Friday - Sunday only.
You’ll still be able to order online for pick up or dine in during our new weekend hours. Catering is still available 7 days a week, and we hope you bring us in to feed your birthdays, office parties, meetings, mitzvahs, and other life events.
We’re making this change to reduce our weekday labor cost and focus on our most profitable retail sales days.
I’m not going to lie, this is really hard to write. Owning a business means being your own biggest hype person and always projecting confidence. Being honest and open about the challenges your business is facing feels wrong. We've been on a long road of holding it all together, and I’m honestly just tired. Business is not good. Our vendor costs have risen steadily and it’s expensive to run a business in Seattle. But the biggest part of this is that people aren’t spending money the same way now that they were even a year ago. So, we have to grapple with the really hard question of whether or not Zylberschtein’s is viable anymore.
This is not how I wanted to mark Zylberschtein’s 7th year. I love making food and I love our customers. I love shaping bagels and pulling freshly baked anything out of the oven. I feel this bread magic in my bones and I want to keep going, but the numbers are not there for us to continue operating in the way we have been.
So please come see us on the weekends and order catering for all of your fun (or not fun) events. We will continue making our hand-rolled bagels, smoky pastrami, and dynamite pastries we are known for. I know we have built a community through Zylberschtein’s and we’re not tapping out yet.
