Why Copain?

The answer is simple: a love of baking and what bread represents in my life.

Bread brings people together. It's shared with friends over drinks and charcuterie, enjoyed at gatherings big and small. Some of my favorite memories began with nothing more than a loaf of bread and good company.

I spent seven years living in France, where the culture of bread and the boulangerie are woven into la vie française. Bread isn't just something to eat; it's a part of everyday life. When I moved back to the US, I realized that this daily ritual was one of the things I missed most.

I've always hoped to recreate a small part of that experience here at home: real, honest bread made with simple ingredients, time, and tradition.

This Saturday, August 29, we'll be opening the ovens again for Copain's second Preview Bake. I hope you'll join us, bring home some good bread, and make a few memories of your own.

An icon of French boulangerie.

With a crisp, golden crust and light, aerated crumb, the baguette finds its place alongside a charcuterie board, passed around the dinner table or just enjoyed on its own.

Did you know that the baguette de tradition, along with other traditional French breads, is protected under French law through the Décret Pain (Bread Decree)? Its ingredients are limited to flour, water, salt and a leavener such as levain or yeast.

At Copain, our Baguette au Levain is made in the traditional French way with just these four simple ingredients. Nothing more.

A first taste of Copain.

After months of testing, preparation, and behind-the-scenes work, we are ready to share our first Launch Preview this Saturday, August 1.

This past weekend, Copain had the honor of contributing baked goods to Nikkei Manor's 6th Bon Odori Festival benefiting the residents of this senior living community. Seeing the joy these bakes brought to the community was a wonderful reminder of why Copain was started: to share bread with friends.

This weekend's preview will feature a small selection of naturally leavened breads and handmade treats, available in limited quantities.
