From start to package it takes about 38 hours to make a loaf of sourdough bread (house temp affects how long it takes). The slow fermentation breaks down the gluten so it's easier to digest and causes less blood sugar spike than store bought bread. My cookies and muffins cold ferment for at least 30 hours so they have all the good benefits of sourdough. It truly is a labor of love
