This is a Strawberry Ladyfinger Icebox Cake that I made this summer!
An Icebox cake is a cake with dairy products, and maybe fruit of wafers, that’s made by refrigerating it for several hours to set instead of using an oven.
Fun fact- 100 years ago refrigerators were “kitchens chill chests” that were kept cool with a block of ice. Hence the name, “Icebox!”
This cake is very simple to make- all it requires is LOTS of ladyfingers (which proved to be quite expensive), strawberries, vinegar, marscapone cheese, whipping cream, sugar, vanilla extract, and a springform pan! You don’t even really need that many utensils! Just some spoons, bowls, and a springform pan. Once its all layered you simply put her in the fridge for at least 8 hours and then you have a yummy cake that holds itself together and tastes almost exactly like strawberry shortcake!
