Every great dessert has two personalities.

One carefully smooths the chocolate, fusses over the details, and insists everything be beautiful.

The other shows up with a torch and asks, “What happens if we set marshmallows on fire?”

Together, somehow, they create this ridiculously gooey S’Mores Cookie Cake.

We delivered to Arrie’s today and discovered there were only 3 Trip Flops cookies left from last week’s drop.

Three.

On a rainy Sunday.

Apparently the weather report called for comfort food.

So we restocked with fresh cookies, Tybee Ocean cookies, and slices of our stuffed cookie pies—including The S’Mores Situation.

If you’re headed to Tybee today, swing by Arrie’s before the locals beat you to it. The way these have been disappearing lately, we wouldn’t wait too long.

A customer messaged today and asked for three of our most popular cookies.

I asked a dangerous question.

“Do you like chocolate, fruit, lemon, banana, cinnamon…?”

Her answer:

“Let’s do a chocolate.”

Now, she probably didn’t realize she had just awakened a cookie that has been sleeping quietly for the last eighteen months.

So we reached for Midnight in Savannah.

Inspired by Midnight in the Garden of Good & Evil, this cocoa butter cookie hides a secret. Inside is either a dark chocolate truffle center (evil) or a white chocolate truffle center (good).

The catch?

Once they’re rolled, we don’t know which is which.

That’s between you and your Maker.

Each one is finished with a blanket of semisweet chocolate, a tiny white chocolate ghost, and a dusting of edible silver moonlight.

It’s one of our favorite storytelling cookies because it feels exactly like Savannah itself—beautiful, mysterious, and just strange enough to make you wonder.

If you happen to eat one while wandering through Bonaventure Cemetery, well…

you’re on your own.

Today’s customer became the very first person this year to take home a Midnight in Savannah.

And somehow that feels exactly right.

Starting next week, you’ll be able to find Trip Flops Bakery cookies at Local Coffee & Bagel on Wilmington Island. 🌊🍪

This feels especially meaningful to us because Wilmington Island is where so much of this dream quietly took root years ago. To now place our cookies into another local space we genuinely love? That’s not something we take lightly.

Fourteen years ago, after moving to Wilmington Island from Atlanta, I doodled a tiny Trip Flops Bakery logo. At the time, it felt like nothing more than a pipe dream.

Now somehow… it’s real.

This Memorial Day, I’ve been reflecting on how dreams like this are only possible because of the sacrifices made by the men, women, and families who defended our freedom.

This week, my son-in-law commissioned into the United States Army as a 2nd Lieutenant, and it made this feel even more personal.

People say the American Dream is dead. I don’t believe that. I think it still lives in small beginnings, hard work, and ordinary people daring to build something meaningful.

Deeply grateful today for those who gave everything so the rest of us could dream freely. 🇺🇸
