Did You Know… The Fridge Is Bread’s Enemy?
My dears, be honest: who among you has ever hidden a fresh loaf in the fridge to keep it "fresh longer"? 🙋♀️
I used to do that too. But then I learned a secret that changed everything.
It turns out, cold actually speeds up the aging of bread. This is called starch retrogradation. Sounds complex, but the idea is simple: at fridge temperatures (around 4°C/40°F), starch molecules start to crystallize rapidly. They essentially "remember" their hard state and push moisture out of the crumb.
The result? The bread becomes dry, tough, and tasteless much faster than if it were just sitting on the counter. The fridge doesn’t preserve freshness — it steals it. 😔
So, where should you store bread?
🌿 At room temperature. In a cloth or paper bag. This allows the bread to breathe while keeping the crust crispy.
In the freezer. If you want to keep it for a long time (a week or more). Freezing stops time. When you’re ready to eat it, just spritz with water and warm it in the oven for 5 minutes. It will taste like fresh! ✨
My sourdough bread lasts longer thanks to long fermentation, but even it prefers the warmth of your kitchen over the chill of an appliance.
