This weekend only (!!!), I have individual skillet carrot cakes with vanilla cream cheese frosting on the weekend specials menu at Madfish!!

They are available today (Thursday) through Monday. The cakes are delicious and moist, made with carrots, cinnamon, pecans, and pineapple. And YES they are still gluten free!
