The quality of my finished baked goods is closely related to the time I invest, but also to the quality of the ingredients I use. All fruits are locally sourced from Michigan farms. My eggs come from happy, free-range hens. Whenever possible, I use organic and non-GMO ingredients.

Thanksgiving must be tomorrow because it’s been a crazy week in the Doll house kitchen! It’s been another beautifully chaotic year, bringing even more reasons to be thankful. Wishing safe travels and delicious eats to all.

Pie Tip #4: Wondering what apples to use in your apple pie? I love to play with different varieties, but a foolproof combination is an equal mix of Granny Smith & Golden Delicious: available year round in grocers everywhere.

I missed my pie tip yesterday. I’ll make up for that today.
Pie Tip #3: Dot some unsalted butter on top of your fruit fillings before placing the top crust. This is an old-fashioned step that bakers once thought would help prevent pies from bubbling over. I’ve proven that theory wrong over & over! But....the butter adds a little richness and enhances the fillings. It also helps keep your top crust crisp.

Pie Tip #2: To help with browning & give them a beautiful sweet crunch, I brush whole cream or milk onto the tops of my double pastry crust pies, and then sprinkle with a blend of fine sugar and coarse raw turbinado sugar.

Friends, I've had to limit the number of orders I can take on over the past year, due to the other areas of my life taking precedence. That resulted in me reducing the Thanksgiving pie orders I could also take for 2018. But please remember that I am always happy to serve as your pie help line!
