Another French classic not to be missed is our famous Croissant aux Amandes. Our secret is that we double bake them for that inexplicable crunch – shhhh don’t tell. The surprise inside is our house-made natural almond paste made with natural almond meal, butter, cane sugar, and a touch of rum. For our croissants, we source all imported French ingredients – Farine de Gruau Rouge from along with Buerre AOP from . Lastly, we top them with natural almond slices and a dusting of powdered sugar. We apologize for the mess but trust us it will be so worth it!

Thrilled to welcome BREAD Artisan Bakery in Los Angeles as the newest member of the Bread Lab Collective. The Approachable Loaf is sold by Collective members as a way to get more whole grain to more people and a way to help support the work of the Breadlab as a portion of sales goes back to the lab to help us keep the lights and ovens on so that we can continue to push the boundaries of whole grain baking.

The Approachable was perfected as an everyday soft whole grain sandwich bread through collaborations with our local free café’ the Friendship House. During the early days of the pandemic when there was no easily available bread, flour, or yeast available in our area King Arthur Baking School and the Breadlab baked, sliced and delivered free of charge over 6,000 Approachable loaves locally.

And hey, kids eat the crust on this stuff. Maybe it tastes good or maybe they know it is good for the planet. Or maybe both.

The Mighty Kouign 👸

Historically, the kouign amann (which is pronounced “queen ah-MAHN”) has been baked in individual portions, akin to a croissant. This regional specialty of Breton features croissant dough laminated in salted butter and rolled in sugar. ⁠

Fast forward to Montreal in the late 20th century: A new style of kouign amann emerges: the giant round, served in slices of delicately folded, buttery, salted dough. Patrons often accompany the early morning treat with coffee and blissed-out smiles.⁠
