🎃 pumpkin sugar cookies!! recipe below. I originally wanted them to be loosely reminiscent of those grocery store sprinkle cookies (the ones that always showed up at school holiday parties?) but then decided I loved the cinnamon sugar too & couldn’t decide (swipe to see>> which ones do you prefer??) the cookie itself is intentionally not super sweet so the sugar/sprinkles add the perfect bit of sweetness.

Makes 3 doz mini cookies

4oz butter softened
2/3 cup brown sugar
33g drained pumpkin purée (about 3 Tbsp)
1 egg
1/2 tsp vanilla

2 1/2 cups flour (300g)
1/2 tsp kosher salt
3/4 tsp pumpkin spice (for a mildly spiced cookie, can add more if you like)

Sprinkles or cinnamon sugar

using a hand mixer mix butter and sugar on med just until well combined. Add pumpkin, egg, vanilla & mix on med until well incorporated. Combine dry ingredients in a separate bowl and to the wet ingredients mixing on the lowest speed. Only mix until no flour is visible, mixture will still be crumbly. Pour crumbly dough onto parchment paper and bring it together by hand, try not to over work it. Wrap in parchment & refrigerate at least 2 hours or overnight. Roll dough between parchment to 1/4” thick. Cut as desired, and place into a shallow bowl of sprinkles/cin sugar. If sprinkles are not sticking well you can very lightly brush the cookies with water before hand. Bake in a 350F preheated oven for 8-10 mins.

Just some lush strawberry infused dark chocolate ganache & chocolate pâte sucrée. So simple & easy to make each component ahead time for an impressive final presentation! ☺️ ganache recipe below! 💕

Strawberry dark chocolate ganache:
100 g dark chocolate
100 g heavy whipping cream
1 oz seedless strawberry preserves (strain if needed)

Chop chocolate and set aside in a heat proof bowl. In a small sauce pan combine cream & preserves. Heat over medium heat until bubbling around the edges. Pour over chocolate and let sit 2-3 minutes. Stir gently with a whisk until well combined and any remaining chocolate has melted. Can be piped into cooled tart shells right away and chilled until set. My tarts were 2”x.75” and used ~18g of ganache per tart. So this would fill 12 tarts.

🍓 cinnamon roll - would you believe me if I said this only took 5 mins of prep?! 🫢 I used 2 TJ cinnamon rolls and filled it up with sliced strawberries to make this dreamy treat! 😍 instructions below:

Ingredients:
TJ ready to bake cinnamon rolls (my roll is made of 2 TJ rolls)
Chopped strawberries
Brown sugar
1-2 tsp heavy cream per roll

Keep 2 rolls attached and unroll them together all the way to the middle. Add plenty of chopped strawberries along the whole roll except for the last 1” or so. Be pretty liberal! I didn’t leave any bare spots. Sprinkle a little brown sugar over the berries. Starting at the center end start rolling it up - lifting and gently tightening as you go along (helps to have a second pair of hands preventing the strawbs from falling out as you roll 😅) I baked mine in a 4” springform pan (jumbo muffin pan would also work or multiple can be baked in a larger pan if preferred just leave about 0.5” perimeter around each roll to expand as they bake). Pour 1-2tsp of heavy cream over each roll before baking. Bake ~18 minutes in a preheated 350F oven. While baking prepare the glaze. Cook 1-2 chopped strawberries (per roll) in a small pan over med/low heat until juicy & soft. Mix half of the TJ glaze with the warm strawbs and set aside. Once the roll is golden brown remove from oven, pour the strawberry glaze, top with more fresh chopped strawberries & a light drizzle of the plain glaze. Serve warm!

chocolate carrot cake! 🥕🍫 I’m honestly pretty conflicted on this one…the carrot was so finely shredded it kinda disappeared & it ended up being just a spiced chocolate cake. I also felt like a tangy cream cheese frosting wasn’t a great fit…maybe a caramel cream cheese? Maybe I’ll keep testing…but she was too cute not to share!

what better way to celebrate your galentines than with brunch?! sharing my favorite waffle recipe (see below) with a cute sweetheart makeover. and don’t forget the mimosas 🍾 💕

2 cups ap flour
3/4 tsp kosher salt (I’m using diamond crystal)
4 tsp baking powder
1 1/2 Tbsp sugar

2 eggs
1 3/4 cup milk
1/3 cup avocado oil
1 tsp vanilla

stir together dry ingredients and set aside. In a large mixing bowl using a whisk attachment (or whisk by hand) whip eggs until frothy. Add milk, oil & vanilla and mix until combined. Add flour, whisking slowly until we’ll incorporated (should only take 30 seconds or so).
Divide up batter adding a few drops of pink food coloring and pour into a piping bag or squeeze bottle. Pipe your colored designs into your preheated waffle iron first & then fill in with plain batter. Top with your favorite fruits & a side of whipped cream! I cut my strawberries & banana slices w/mini heart cutters ☺️

Small batch chocolate hazelnut croissant pudding! 😍 Perfect decadent treat for 2 but can easily be scaled up for a crowd as well! recipe below 💕

1 stale croissant, cut into 1 inch cubes
2 oz milk
2 oz cream
1 oz bittersweet chocolate finely chopped
1/2 tsp vanilla bean paste

1 egg
2 Tbsp sugar
Pinch of kosher salt

1 oz milk chocolate, roughly chopped
1-2 Tbsp chopped, toasted hazelnuts or nuts of choice (optional)

Caramel, Powdered sugar & whipped cream for serving

Butter a small baking and set aside (can check size with the croissant cubes). In a small saucepan over med-low heat, combine milk & cream. Bring to a simmer then remove from heat and pour over finely chopped bittersweet chocolate. Add vanilla paste & set aside. In a med bowl whisk egg, sugar & salt until combined. Starting very slowly (to not curdle the eggs) & whisking constantly, pour chocolate mixture into the egg mixture. Once combined, pour through a fine sieve onto prepared croissant pieces. Preheat oven to 350 degrees F. Let croissant sit 15 minutes, making sure all pieces are saturated. Mix in milk chocolate & nuts if using. Pour into prepared pan & bake 30-35 mins. Best served warm, drizzle with caramel & a dusting of powdered sugar & a dollop of whipped cream.
