Roasted Rosemary Chicken

whole chicken (4-5lbs)
3 tbsp Rosemary Olive Oil
fresh garlic, rosemary, thyme
1 lemon
1 onion
paprika
salt & pepper

*pat chicken dry
*mix oil + garlic + herbs + paprika + salt and pepper
*rub all over chicken and under skin
*stuff with lemon & onion
*roast at 425 for 1 hr 15min, until golden & cooked through (160 internal temp)
*rest 10-15 min before slicing

Drizzle extra olive oil over top before serving.

Quick, flavorful side that goes with everything- ready in minutes. 🍄‍🟫🌿

1 bunch asparagus, trimmed
1 small onion, sliced
8 oz mushrooms, sliced
2 tbl Italian Blend EVOO
2 cloves garlic, minced
salt & pepper

Heat oil in skillet on medium heat, add onions ➡️ sauté 3-4 minutes, add mushrooms ➡️ cook 5-6 minutes until golden, add asparagus + garlic ➡️ sauté 4-5 minutes until tender, season with salt & pepper.

Garlic Chicken Lettuce Wraps

1 lb ground chicken
2 tbl Arbequina EVOO
3 cloves garlic, minced
1 small onion, diced
1 c diced mushrooms
1 c shredded carrots
2 tbl soy sauce
1 tbl rice vinegar
1 tbl honey
1 tsp grated ginger
salt/pepper
butter lettuce

Heat olive oil, sauté garlic + onion. Add chicken and cook until browned. Stir in carrots, soy sauce, honey, ginger, salt + pepper. Let it simmer, then scoop into lettuce leaves. Finish with a light drizzle of olive oil and your favorite toppings.
