Olive Oil Triple Chocolate Cookies

This recipe is SO good SO easy and I have made it SO many timeshare I’m surprised it somehow has missed being posted until now.
I found the recipe on the website and adapted it a just a bit. I added one tsp of fine salt to the batter and reserved the flaky salt for topping only. It might seem like a lot of salt but it balances the sweetness of alllll the chocolate perfectly. I also TRIPLED the amount of chocolate. The recipe called for 5 ozs chopped dark chocolate. I put 10 ozs of chips in the batter and placed chunks of a chopped dark chocolate bar on top before baking. Immediately after taking them out of the oven I sprinkled the flaky sea salt on top, then let them cool about 5 mins on the cookie sheets before transferring to a wire rack to cool completely.

Ingredients
6 tbsp melted butter
2 tbsp olive oil
3/4 cup brown sugar
1/4 cup white sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
1/2 tsp baking soda
1 tsp salt
5 ounces dark chocolate, roughly chopped
5 ounces semisweet chocolate chips
5 ounces milk chocolate chips

Instructions
1) Preheat oven to 350 degrees and line a baking sheet with parchment paper.
2) In a large bowl, mix together butter or ghee, olive oil, brown sugar, and unbleached sugar until light and fluffy. Mix in the egg and vanilla.
3) In a small bowl, whisk together the flour, baking soda, and salt.
4) Mix the flour mixture into the sugar mixture until just combined. Fold in chopped chocolate. Cover the bowl and place in the fridge for 20 to 30 minutes.
5) Scoop out 1-inch balls of dough and place 1-inch apart on prepared baking sheet. Bake 11 to 12 minutes until the edges are golden brown while the centers remain gooey.

Whipped Chocolate Mousse

This is basically a mash up of whipped cream and frosting that can be flavored just about any way you like. I first made these as “almond frosting shots” following a recipe from for a baby shower in February 2022 and have made them again in various flavors for at least 3 baby showers since.

When adding other flavors I tend to use either syrups (for chocolate flavors) or extracts. I haven’t tried other add ins but am going to do one soon with instant espresso sifted in to the powdered sugar soon. I add in the syrup/extract with the powdered sugar and cream cheese so it’s incorporated before adding the heavy cream. I don’t use more than 1/2 a cup of syrup to help keep the final integrity and haven’t needed to add more than a teaspoon or two of extract (depending on the strength of flavor you want). Make sure not to overbeat or you’ll end up with a soupy mix that can no longer be whooped into peaks.

They’re fairly easy, super delicious, and look super cute on your great table.

Cupcakes!

I made these vanilla cupcakes for the Baptism celebration of a fellow Junior League member’s little one. At first she asked for cake pops (I hate cake pops) and when my cake pop connection fell through and I suggested she search on a makers group page she asked for mini cupcakes instead. Cupcakes I can do.

The cupcake recipe is a recipe I’ve posted before (tri-color vanilla almond minis) and the frost on by is super simple (and almost foolproof) recipe by that is literally 1 cup butter, 1 cup powdered sugar, 1 Tbsp vanilla and enough heavy cream to get it to the consistency of your liking. I quintupled (yes x5) the recipe and doubled the frosting to make 180 minis. Most of those were decorated and dropped off the morning of the baptism, while the rest were shared with Junior League members at a meeting that afternoon and coworkers later in the week.
