Pistachio filled and Date & Cardamom Maamoul Shortbread Cookies (Petra Cookies)

These are some of the oldest types of cookies in Jordan and the Middle East. They are typically made during the holidays but can be eaten any time of the year.

The name Maamoul means ‘Made’ or ‘To Make’ in Arabic where these are traditionally handmade using a wooden floral pattern mold.
