When you think your recipes can't be improved, different techniques can. My universal cookie recipe (in this case, double chocolate sea salt), has a set recipe. On a slight time crunch, I fridged the cookies for 2 hours and baked (photo on the right). New recipe (photo on the left) was fridged over night, allowing leaveners to get to know each other and butter to solidify fully. Thus, the cookie slowly expanded while baking, yielding a more textured surface. Ingredients, time and temperature did not change.
